This fluid isn't just water; it is packed with enzymes like amylase that begin breaking down carbohydrates the moment food enters your mouth. Saliva also contains proteins that shield your teeth from decay and minerals that actively rebuild enamel. Without it, eating would be painful and your teeth would rapidly rot.
The Network of Glands Behind Daily Secretion
Every day, the human oral cavity receives between 0.5 and 1.5 liters of saliva, a volume produced continuously to maintain the health of the mouth, throat, and teeth. This fluid does not emerge from a single source. Instead, it is synthesized and secreted by an intricate network of three pairs of major salivary glands alongside hundreds of microscopic minor glands scattered across the oral mucosa. The three major pairs are the parotid glands, located in front of and just below the ears; the submandibular glands, resting beneath the lower jaw; and the sublingual glands, positioned beneath the floor of the mouth under the tongue.
Each set of glands contributes a distinct formulation to the pooled fluid in the mouth. The parotid glands produce a thin, watery serous fluid rich in digestive enzymes, accounting for a large portion of output during eating. The submandibular glands yield a mixed serous and mucous secretion that provides the majority of saliva during resting or unstimulated conditions. The sublingual glands secrete a thicker, mostly mucous fluid designed primarily for lubrication. Scattered across the lips, cheeks, palate, and tongue, the minor salivary glands continuously deposit mucous secretions directly onto mucosal surfaces, keeping the lining moist even when the major glands are relatively quiet.
Salivary flow rates fluctuate dramatically over a 24-hour cycle. Production reaches its peak during meals, when mechanical chewing and chemical taste signals stimulate the glands to release large volumes of fluid. In contrast, basal or resting flow remains relatively low throughout the day and drops to near zero during deep sleep. This nocturnal drop in secretion explains why bacterial activity increases overnight, often resulting in dry mouth and morning breath upon waking.
