Oregon has an official state microbe, and you can drink it
In 2013, Oregon became the first U.S. state to officially designate a state microbe: Saccharomyces cerevisiae, commonly known as brewer's yeast. This tiny fungus is responsible for baking bread and brewing beer, two cornerstones of Oregon's craft culinary economy. Legislators passed the bill to celebrate the organism's massive economic contribution to the state's famous craft breweries.

State symbols in the United States traditionally include birds, flowers, trees, and mammals. The Cellular Biology of Budding Yeast
Saccharomyces cerevisiae is a single-celled eukaryotic fungus. The genus name translates roughly to 'sugar fungus,' while the species name derives from the Latin word for beer. Unlike bacteria, which are prokaryotes lacking a nucleus, yeast cells contain a defined nucleus, mitochondria, and internal membrane structures similar to those found in human cells. They typically measure between five and ten micrometers in diameter and have a round to oval shape.
The species reproduces primarily through a specialized asexual process known as budding. During budding, a small daughter cell protrudes from the parent cell, receives a copy of the replicated genome and organelles, and eventually pinches off, leaving a permanent chitin-rich bud scar on the mother cell's surface. Saccharomyces cerevisiae can also reproduce sexually, alternating between stable haploid states (possessing one copy of each chromosome) and diploid states (possessing two copies). Two mating types, termed 'a' and 'alpha,' communicate via pheromones to fuse and form a diploid cell.
